Chocolate Mint Brownies

  • 1 cup white sugar
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 1/2 cups chocolate syrup
  • 1/2 cup butter, softened
  • 2 cups confectioners’ sugar
  • 6 tablespoons butter
  • 2 tablespoons creme de menthe liqueur
  • 1 cup semisweet chocolate chips


      1. Preheat oven to 350 F.


      2. Grease a 9×13 inch baking dish, and set aside.


      3. In a large bowl, mix together 1 cup sugar and 1/2 cup of softened butter until smooth.


      4. Beat in eggs one at a time.


      5. Once eggs are beaten in stir in the chocolate syrup.


      6. Stir in the flour until just blended.


      7. Spread the batter evenly into the prepared baking dish.


      8. Bake for 25 to 30 minutes in the preheated oven. Insert a toothpick and it should come out relatively clean.


    9. Let brownies cool in the dish.

Mint Spread

      1. In a small bowl, beat the confectioners’ sugar, 1/2 cup butter or margarine and creme de menthe until smooth.


    2. Spread evenly over the cooled brownies, then chill until set.

Chocolate Spread

      1. In a small bowl over simmering water, melt the remaining 6 tablespoons of butter and the chocolate chips, stirring occasionally until smooth.


      2. Allow to cool slightly, then spread over the top of the mint layer.


    3. Cover, and chill for at least 1 hour before cutting into squares.
