1. Cut each strawberry in half, lengthwise.
2. Use a melon baller or paring knife to scoop out the middle.
3. In a medium bowl, beat the mascarpone, cream, sugar, vanilla, and cardamom until soft peaks form.
4. Spoon mixture into strawberries (about 1 tablespoon each).
5. Sprinkle lightly with cinnamon, and serve.
