Chocolate Mint Brownies

Ingredients
- 1 cup white sugar
- 1/2 cup butter, softened
- 1 cup all-purpose flour
- 4 eggs
- 1 1/2 cups chocolate syrup
- 1/2 cup butter, softened
- 2 cups confectioners’ sugar
- 6 tablespoons butter
- 2 tablespoons creme de menthe liqueur
- 1 cup semisweet chocolate chips
Preparation
- 1. Preheat oven to 350 F.
- 2. Grease a 9×13 inch baking dish, and set aside.
- 3. In a large bowl, mix together 1 cup sugar and 1/2 cup of softened butter until smooth.
- 4. Beat in eggs one at a time.
- 5. Once eggs are beaten in stir in the chocolate syrup.
- 6. Stir in the flour until just blended.
- 7. Spread the batter evenly into the prepared baking dish.
- 8. Bake for 25 to 30 minutes in the preheated oven. Insert a toothpick and it should come out relatively clean.
- 9. Let brownies cool in the dish.
Mint Spread
- 1. In a small bowl, beat the confectioners’ sugar, 1/2 cup butter or margarine and creme de menthe until smooth.
- 2. Spread evenly over the cooled brownies, then chill until set.
Chocolate Spread
- 1. In a small bowl over simmering water, melt the remaining 6 tablespoons of butter and the chocolate chips, stirring occasionally until smooth.
- 2. Allow to cool slightly, then spread over the top of the mint layer.
- 3. Cover, and chill for at least 1 hour before cutting into squares.
