Creamy Chicken Enchilada Dip

This Mexican-style dip highlights all of the delicious flavors of chicken enchiladas: spicy, cheesy, creamy. It can be served hot or cold, with tortilla chips.

  • 2 cups shredded Rotisserie chicken
  • 8 oz cream cheese, softened
  • 1 cup mayonnaise
  • 8 oz shredded Mexican blend cheese
  • 4 oz can diced green chilis
  • 4 oz can diced jalapeños, drained
        1. Preheat oven to 350 degrees.
        2. In a medium bowl, combine all ingredients.
        3. Transfer the chicken mixture to a medium baking dish.
        4. Bake for 30 minutes, or until the edges are golden brown.
        5. Serve warm, with tortillas chips.
