Muffuletta Salad

This salad is full of all the intense flavors of a Muffuletta sandwich and much healthier, without the bread.

  • 24 small pimento stuffed green olives, halved
  • 1 cup of roasted red peppers – drained and finely diced
  • 4oz provolone cheese block, finely cubed
  • 1/2 cup pepperoncini – drained and sliced into rings
  • 1 large head of romaine lettuce, chopped
  • 4oz dry salami, sliced into matchsticks
  • 1/4 red onion, finely diced
  • 1 pint grape tomatoes, halved or quartered

      • For the Dressing:

      • 2 tablespoons olive oil
      • 2 inches anchovy paste
      • 2 tablespoons red wine vinegar
      • 1 garlic clove, finely minced
      • 1 tablespoon dijon mustard
      • several grinds of fresh pepper
      • 1 teaspoon sugar
    1. In a large bowl, combine all of the chopped ingredients.
    2. In a sealed container (mason jar), vigorously shake all of the dressing ingredients to combine.
    3. Add dressing to salad and toss well to coat.
